Simon Rogan served up a tasty roast sweetheart cabbage with mock teriyaki served with a mushroom sauce on Saturday Kitchen.
For the mock teriyaki are: 250ml stout vinegar, 50ml English mead, 300ml mushroom stock, 50g fermented mushroom juice, 50g sugar and 10g kuzu starch (or cornflour) mixed to a thin paste with a little water.
