Fearne Cotton and Jamie Oliver served up tasty Mexican fish tacos for a taste of Mexico on Jamie and Jimmy’s Friday Night Feast.
Jamie says: “I’ve served these incredible fish tacos with all the trimmings – chunky guacamole, sweet pineapple salsa, garlicky sour cream and a jalapeño-spiked slaw – this is to die for. ”
The ingredients are: 1 x 400 g tin of cannellini beans, 8 large quality flour tortillas, olive oil, 4 x 200 g haddock fillets , skin on, scaled and pin-boned, from sustainable sources, 1 lemon and a few sprigs of fresh mint.
For The White Garlic Sauce: 1 bulb of garlic, 150 ml sour cream, 1 lime and a few sprigs of fresh flat-leaf parsley.
Pineapple Salsa: 1 small fresh pineapple, 2 fresh chillies , mixed colours if possible, ½ a bunch of fresh mint, 1 small red onion, 2 limes and extra virgin olive oil.
For The Guacamole: ½ a small red onion, 2 spring onions, 1-2 fresh red chillies, 3 ripe avocados, 2 ripe tomatoes and a few sprigs of fresh mint and 1 lime.
For The Slaw: ½ a red cabbage, 1 fresh jalapeño chilli and 1 tablespoon red wine vinegar.
