Phil Vickery Roast lamb with fresh mint sauce recipe weekend comfort food on This Morning

Phil Vickery served up a hearty roast lamb with fresh mint sauce and celeriac and potato gratin for a weekend comfort food on This Morning.

The ingredients for the roast leg of lamb: 1 medium sized leg of British lamb, Salt and pepper and 3 – 4 tbsp olive oil.

For the fresh mint sauce: 1 medium orange, 6 – 7 white sugar cubes, 100ml cider vinegar, 2 pinches salt, 50g fresh mint, roughly chopped and 4 leaves gelatine, soaked in cold water, optional.

For the celeriac and potato gratin: 350g celeriac (approximately 500g before its peeled), 350g potatoes, peeled, 600ml whipping cream, 4 cloves of garlic, crushed and Salt and freshly milled black pepper.
