Nigel Barden made a delicious apple cake with lemon and chocolate flecks on Radio 2 Drivetime with Simon Mayo.
To make his cake, Nigel used a recipe from the book title: Honey & Co: The Baking Book (available at amazon) by Sarit Packer and Itamar Srulovich.
The ingredients are: 2 tbsp whisky, zest and juice of 1 lemon, 2 pink lady apples (200g once diced skin-on), 40g bitter chocolate (70% cacao), 2 eggs, 160g caster sugar, 120g vegetable oil, 150g plain flour, 1½ tsp baking powder, 1 tsp ground nutmeg, 1 tsp ground fennel seeds and a pinch of table salt.
