James Martin served up tasty roast grouse with pear tatin and kale on James Martin: Home Comforts.

The ingredients are: 150g sugar, 1 lemon, cut in half, 3 ripe pears, peeled but left whole, 100g butter, plus extra for greasing, 100g ready-rolled all-butter puff pastry, 6 grouse, cleaned, 4 sprigs fresh thyme, leaves only, 500g celeriac, peeled, cut into small chunks, 75ml port, 200ml concentrated chicken stock, 300g kale, tough stalks removed and salt and freshly ground black pepper.
