James Martin served up smoked salmon and chive choux buns with watermelon and feta cheese bites canapes for the festive season on Home Comforts at Christmas.
The ingredients for the choux buns: 50g cold butter, diced, pinch salt, 75g strong flour, 2 free-range eggs, 150g smoked salmon, finely chopped, 75g soft cream cheese, 250g crème fraîche, ½ lemon, juice only, 2 tbsp very finely chopped fresh chives and freshly ground black pepper.
For the watermelon and feta bites: ½ small watermelon, flesh cut into 2.5cm cubes, 250g feta, cut into 2.5cm cubes, small handful fresh basil leaves, preferably Greek basil and 1-2 tbsp sherry vinegar.
