Ching He Huang served up a tasty beef Dan Dan noodles on Lorraine .
The ingredients for the meat topping: 2 tbsp vegetable oil, 2 cloves garlic, crushed and finely chopped, 1 tbsp freshly grated root ginger, 1 medium red chilli, deseeded and finely chopped, 250g minced beef, 1 tbsp rice wine or dry sherry, 100g cornichons or cocktail gherkins in vinegar, drained and finely diced and 1 tbsp light soy sauce.
For the noodle base and sauce: 500g wheat flour noodles, Toasted sesame oil, 1 tsp sesame paste, or tahini blended with 1 teaspoon toasted sesame oil, 1 tsp chilli oil, 1 tbsp black rice vinegar or balsamic vinegar and 750ml pints chicken stock.
For the garnish: 1 tsp whole Sichuan peppercorns, 1 large spring onion, finely chopped, 1 small handful of fresh coriander, leavesand stalks finely chopped, 1 tsp chilli oil and 1 tsp toasted sesame oil.
