James Tanner served up a tasty Tuscan bean stew on today’s episode of Lorraine.
The ingredients are: 2 tbsp olive oil, 1 potato, diced, 1 large carrot, diced, 1 small onion, diced, 2 sticks celery, diced, 1 clove garlic, minced, 1 sprig rosemary, leaves picked and chopped, 4 slices Parma Ham, shredded and chopped, 1 L chicken stock, 1 can borlotti beans, 1 can beans of your choice, 200g (handful) leftover chicken, shredded, 2 large leaves of cabbage or handful cavolo nero or kale, shredded and chopped, salt and black pepper.
For the croutons: 1 ciabatta, torn into chunks, Olive oil, for drizzling and 5 tbsp freshly grated Parmesan cheese.
