Phil Vickery served up a tasty chicken noodle soup on This Morning.
The ingredients are: 1 small cauliflower, cut in to very small florets approximately 2cm pieces, 1 x 420g can chickpeas, well drained, 4 tbsp any oil and 100g dried rice vermicelli.
For the paste: 2 tbsp finely chopped fresh ginger, 1 tsp ground cumin, 1 tsp ground turmeric, 4 cloves garlic, peeled, 1 tbsp fresh red chilli finely chopped,2 small onions very finely chopped, 50mls coconut milk, 1 tbsp lemon grass puree (jarred is great) and 1 x 10g vegetable stock cube.
For the soup: 300mls coconut milk, approximately, 200mls water, approximately, 1 -2 tbsp palm or light brown sugar,2 tsp fish sauce, small handful beansprouts, 50g spinach, 4 spring onions, sliced thinly and diagonally, juice 2 large limes and salt and pepper.
Served with: 2 -3 tbsp roughly chopped Thai basil, 2-3 tbsp roughly chopped fresh coriander, fresh sliced red chilli, lime wedges, cooked chicken and cooked or raw prawns.
