John Torode Sydneysider Corncakes Recipe on Sunday Brunch

John Torode serevd up his tasty Sydneysider – corncakes and smashed avocado dish on Sunday Brunch.

The ingredients for the corncakes: 50g butter, melted and allowed to cool slightly, 2 eggs beaten, 175ml milk, 1 x 340g tin sweetcorn,1 x 400g tin creamed corn, 270g self-raising flour, 1 teaspoon paprika, 1 teaspoon bicarbonate of soda, 2 teaspoon olive oil, 12 rashers of smoked streaky bacon and Salt and freshly ground black pepper.

For the smashed avocado: 2-3 large ripe avocados, Juice 1/2 lemon, Juice of 1 lime and 2 drops of Tabasco sauce.
