Tom Aikens served up tasty fish cakes with tartar sauce on This Morning.
The ingredients to poach the fish: 500ml milk, 2 bay leaves, 2 bashed garlic cloves, Two strips of lemon peel, 2 fish cakes per person, 200g piece of pollock fillet, 200g piece of salmon fillet and 200g piece of cod fillet.
To make the fish cakes: 50g butter, 1 onion finely diced, A little salt, 2 bay leaf, Small amount of picked thyme leaf, 600g baked moulis potato from 1kg of baked potato, 2 tbsp chopped capers, washed drained dried very well then chopped, 2 tbsp chopped gherkins washed drained dried very well then chopped, 1 tbsp chopped parsley, Cooked pollock, Cooked salmon, Cooked hake and zest of 1 lemon (use a microplane grater to get a fine zest).
