Mary Berry bake a delicious four tier lemon cake on Best Bakes Ever.
Mary says: “There are three whole lemons used in the cake, icing and decoration so the flavour is incredibly intense and delicious.”
The ingredients for the decoration: 1 thin-skinned lemon and 50g caster sugar.
For the cake: 2 small or 1 large thin-skinned lemons, 275g softened butter, 275g caster sugar, 275g self-raising flour, 2 level tsp baking powder and 4 free-range eggs.
For the filling: 50g soft butter, 175g icing sugar, 250g full-fat Italian mascarpone and 175g fondant icing sugar.
