Sat Bains serves up a tasty Greek-style mutton dish on Saturday Kitchen.
Sat says: “This meal requires overnight preparation, but the result is tender mutton, rich sauces and great flavours.”
The ingredients for the yoghurt: 500ml natural yoghurt, 40g caster sugar and 1 lemon, sliced.
For the braised mutton: 200g salt, 1 tsp red chilli, 2 garlic cloves, chopped, 1 tsp cumin, 1 tsp ground coriander, 1 kg mutton shoulder (boned weight), olive oil, for frying, 350ml white chicken stock and 350ml brown chicken stock.
For the mutton ragù: 100g/3½oz minced pork belly, 100g minced mutton shoulder, 2 shallots, chopped, 1 tsp chopped red chilli, 2 garlic cloves, chopped, 1 tsp ground cumin, 1 tsp ground coriander, 1 tbsp tomato purée, 200g chopped fresh tomatoes and 100mlbrown chicken stock.
