Nigel Barden served by chicken Jalfrezi curry on Radio 2 Drivetime with Simon Mayo using a recipe by Chetna Makan.
The ingredients for the chicken are: 600 gms boneless skinless chicken cut into long strips, ½ tsp salt, 1 tsp coriander powder and ¼ tsp turmeric powder.
For the sauce: 1 tbsp sunflower oil, 1 onion, grated, 2 tomatoes, grated, ½ tsp salt, ½ chilli powder, 2 green chillies, 1 tsp garam masala, ¼ tsp turmeric powder, 2 tbsp sunflower oil, 2 onions, thinly sliced, 1 green pepper, thinly sliced, 2 green chillies, finely chopped, 2 inch ginger, cut into juliennes, ½ tsp salt, ½ tsp chilli powder, ½ tsp garam masala, 2 tbsp vinegar, 4 tbsp ketchup and handful of fresh coriander, roughly chopped.
