Si and Dave make a delicious Polish vodka strawberry cheesecake dessert in Poland on The Hairy Bikers’ Northern Exposure.

The ingredients for the vodka strawberries: 100ml vodka, 1 tbsp caster sugar, 1 tsp vanilla bean paste and 400g strawberries, quartered and pricked all over with a fork.

For the biscuit base: knob of butter, for greasing, 300g/10½oz biscuits, such as digestive biscuits, pinch of salt and ½ tsp cinnamon, 150g unsalted butter, melted.

For the cheesecake filling: 500g curd cheese, 375ml double cream, 1 lemon, juice and zest only, 200g caster sugar, 1 tsp vanilla bean paste, 50g cornflour and 5 free-range eggs, beaten.

To decorate: 100g strawberry jam, 200g strawberries, halved and whipped cream, to serve.
