Ainsley Harriott served up a traditional Jordanian Maklouba or (makloubeh) chicken with rice and vegetables dish on Ainsley Harriott’s Street food in Amman, Jordan.
Maklouba is cooked with a mix of traditionally Middle Eastern flavours – turmeric, cumin, sumac and cinnamon – with meat, rice and veg piled artfully into a pot and cooked over the stove. When cooked it is tipped upside down on a plate revealing the patterns of meat and vegetables below.
The ingredients for the dish are: aubergine, cauliflower, tomatoes, cinnamon, Middle Eastern mixed spiced, cardamon, sumac, chicken, rice and chicken stock.
