The ingredients for the cakes: 250g Butter, 250g sugar, 4 eggs and 250g self raising flour.

For the fruit mixture: 1 bunch mint, 50g caster sugar, Dash pimms and ½ cucumber, finely sliced.

For the icing: 600g icing sugar, 100g Butter, 5 large tbsp Pimms, 250g Cream cheese, cold and 300ml double cream, whipped.
