Bill Granger served up a tasty Vietnamese chicken salad for the summer on Lorraine.
The ingredients are: 3 spring onions, 3 skinless chicken breasts, 2 cm piece ginger, sliced, 1 garlic clove, bashed with the side of a knife, 1 Chinese or any cabbage, finely shredded, A handful basil leaves, A handful bean sprouts, 1 large carrot, finely julienned and A handful mint leaves.
For the dressing: 1/2 red onion, thinly sliced, 2 cloves garlic, minced, 2 small red chilies, finely chopped, Juice of 2 limes, 3 tbsp fish sauce, 1 tbsp rice wine vinegar and 2 tsp caster sugar.
