Phil Vickery served up a tasty classic chicken curry in honour of Armed Forces Dayon This Morning.
The ingredients are: 4 tbsp vegetable oil, 8 skin on boneless chicken thighs, cut in to 4, 1 large onion, chopped, 2 carrots, peeled and cut into 1cm cubes, 2 sticks celery, cut into 1cm cubes, 2 garlic cloves, crushed, 3-4 tbsp mild Madras curry powder, 2-3 tbsp plain flour, 2 x 10g chicken stock cubes, 1 tbsp tomato puree, 2 tbsp unsweetened desiccated coconut, 2-3 tbsp mango chutney, 4 tomatoes, chopped, ¼ cucumber, chopped, 1 onion, chopped, 1 handful raisins, 1 banana, chopped, 1 tablespoon desiccated coconut and Salt and freshly ground black pepper.
