Bruno Pinho showcased his delicious Portuguese custard tarts on Nigel Slater: Eating Together.
The ingredients for the sugar syrup are: 250g caster sugar, 1 cinnamon stick and ½ lemon, whole peeled rind only.
For the custard filling: 25g plain flour, plus extra for dusting, 12g cornflour, 300ml milk, 4 free-range egg yolks, plus 1 whole free-range egg, vanilla seeds from one vanilla pod and 300g ready-made all-butter puff pastry.
