Antonio Carluccio served up a heart warming duck with Param ham dish in Italy on Saturday Kitchen.
The ingredients are: 200g Parma ham fat, Finely minced or chopped, or pork lard, 10g black peppercorns, crushed, 1 garlic clove, peeled and pureed, Freshly grated nutmeg, A pinch of ground cinnamon, 1tbsp each of rosemary needles and sage leaves, finely chopped, 1 x 2kg free-range duck, 4tbsp olive oil and Salt.
