Nigel Slater serves up beef stew with suet dumplings on Nigel Slater: Eating Together.
The ingredients for the beef stew: 4 tbsp olive oil, 500g chuck steak, cubed, 2 onions, roughly chopped, 1 large carrot, peeled, roughly chopped, 1 celery stalk, trimmed, roughly chopped, ½ swede, peeled, roughly chopped, 2 tbsp plain flour, 1 litre beef stock, 400ml red wine, 2 bay leaves, salt and freshly ground black pepper.
For the suet dumplings: 125g plain flour, 65g shredded suet, 1 tsp baking powder, 1 tsp salt and 4-5 tbsp cold water, to mix.
For the herby oat dumplings: 70g fine oatmeal, 70g plain flour, 1 tsp baking powder, 1 tsp salt, 1 tbsp chopped fresh parsley, 2 tsp chopped fresh rosemary leaves, 2 tsp fresh thyme leaves, 80g chilled butter and 4-5 tbsp cold water, to mix.
