Mary Berry served up a tasty pesto lemon chicken dish inspired by her love of fresh herbs on Mary Berry’s Absolute Favourites.
Mary’s dish is perfect for a summer lunch or light dinner and is a take on the classic Mediterranean tricolore salad but with cucumber instead of mozzarella and added chicken.
The ingredients are: 3 cooked chicken breasts, skinned, boned, halved horizontally and sliced into thin strips, 2 large ripe avocados, peeled and sliced, ½ lemon, juice only, ½ cucumber and 18 baby plum tomatoes, halved lengthways.
For the dressing: 4 tbsp fresh green basil pesto, 6 tbsp light mayonnaise, ½ lemon, juice only and salt and freshly ground black pepper.
To serve: 25g pine nuts, toasted, micro salad and basil leaves.
