Mary Berry used lemon verbena from her herb garden as the key ingredient to make her delicious signature lemon drizzle cake on Mary Berry’s Absolute Favourites.
Lemon verbena is a sweet smelling plant, which is normally used for making herbal tea. Mary says: “Don’t worry if you can’t get hold of lemon verbena, the recipe will work perfectly well without it.”
The ingredients are: 225g baking spread, straight from the fridge, or butter at room temperature, plus extra for greasing, 225g caster sugar, 275g self-raising flour, 2 level tsp baking powder, 4 free-range eggs, 4 tbsp milk, 2 lemons, zest only and 1 heaped tbsp very finely chopped lemon verbena (optional).
For the glaze: 175g granulated sugar and 2 lemons, juice only.
