Nigella Lawson roast lamb recipe on Saturday Kitchen

Nigella Lawson served up a delicious roast lamb with aubergines and a red onion soaked in vinegar side dish on Saturday Kitchen.

The Ingredients for the aubergines and red onions dish are: 500g baby aubergines, 3 tbsp olive oil, 2 tsp dried oregano, 1 small red onion, cut into thin half-moons, 3 tbsp red wine vinegar, 1 tsp sea salt flakes or ½ tsp pouring salt, 4 tbsp extra-virgin olive oil, 1 clove garlic, peeled, 1½ tbsp cold water and few sprigs fresh oregano (optional).
