Ainsley Harrriott serves up salmon burgers in a ciabatta bun with spinach and mayo on This Morning.
The ingredients are: 600g salmon fillet, skinned and boned, 2 tbls Dijon mustard, Salt and freshly ground black pepper, Flour for dusting and 1 tbls olive oil and knob of butter.
For the Sun-blushed Mayonnaise: 3 tbls mayonnaise, 3 tbls half fat crème fraiche, 1 tbls sundried tomato puree, Small bunch of chives, snipped (optional), 4 Ciabatta rolls, 1 small packet fresh baby spinach leaves and 4 ciabatta rolls, split in half.
For the home-made salmon fish-fingers: 175g fresh white breadcrumbs, Salt and freshly ground black pepper, 50g seasoned flour, 450g salmon fillet, skinned and boned, 2 eggs plus 6 tbls milk whisked together in a shallow dish, 4 tbls sunflower oil, Lemon wedges to serve and Watercress and spinach salad with cherry toms and baby beetroot.
