Cyrus Todiwala cooks spicy chorizo and cheese filled bread rolls with spiced baked beans on Saturday Kitchen.
Cyrus says: “Try these spicy stuffed dough balls as a crowd-pleasing alternative to pizza.”
The ingredients for the stuffing: 300g spicy chorizo, skin removed, chopped into small pieces, 2 small onions, finely chopped, 1-2 tsp paprika and 1 green chilli, finely chopped.
For the chilli cheese mixture: 200g Sao Jorge cheese, grated, 200g Nisa cheese (mature sheep’s cheese), grated, 2 green chillies, finely chopped, 1 garlic clove, peeled and finely chopped and 4 sprigs coriander, chopped.
For the bread: 1 tbsp dry yeast, 100g fine semolina, 400g plain flour, 1 tsp salt, vegetable oil, for greasing and 100g butter, melted.
For the spiced baked beans: 2 tbsp unsalted butter, 1 tsp cumin seeds, 4-5 garlic cloves, peeled and finely chopped, 3 green chillies, finely chopped, 2 medium onions, chopped, 1 x 420g tin baked beans and 1 tbsp fresh coriander, chopped.
