Nigel Barden served up a Spanish pepper and chorizo pie on Drivetime Simon Mayo.
The ingredients for the pastry:
200g plain flour, ¼ tsp salt, 100g cold unsalted butter, cubed, 2 egg yolks, beaten, 2 tbsp iced water, pinch saffron strands.
For the filling: 25g butter, 2 large onions, chopped, 1 red pepper, seeded and chopped, 1 green pepper, seeded and chopped, 1 small hot red chilli, seeded and finely chopped, 1 clove garlic, finely chopped, 1 small bunch flat-leaf parsley, chopped, 300g Chorizo sausage, diced, 250g lean pork loin; finely diced, 90g cured Serrano ham, salt and ground black pepper.
