The Spice Men serves up chocolate and cardamom mousse cake with homemade honeycomb on Saturday Kitchen.
Tony Sing says: “This is a really simple torte recipe, and if you’re really pushed for time you can even buy the sponge base to make it even easier for yourself.”
The ingredients are: 15g unsalted butter, plus extra for greasing, 75g caster sugar, 2 free-range eggs, ½ tsp vanilla extract, 60g plain flour, sieved, 2 tbsp cocoa powder, 2 tsp whisky (preferably single malt) and salt.
For the honeycomb: 2 tbsp golden syrup, 100g caster sugar, ½ tsp ground cardamom (about 12 cardamom pods, seeds finely ground) and 1½ tsp bicarbonate of soda.
For the chocolate torte: 250g dark chocolate, 70% cocoa solids), finely chopped, 430ml double cream, whipped to soft peaks, 1 tbsp whisky (preferably single malt), 1 tsp ground cardamom (about 50–60 cardamom pods, seeds finely ground), 50g caster sugar and edible gold dust, to decorate.
