The Spice Men serves up a delicious apple crumble with star anise on Saturday Kitchen.
Tony Sing says: “This is a lovely traditional pudding, but the star of the show – see what I’ve done there? – is the star anise, which gives the dish a warming, aromatic feel.”
The ingredients for the crumble topping, 300g plain flour, 200g brown sugar, 200g unsalted butter, cubed and softened to room temperature, plus extra for greasing and pinch salt.
For the filling: 75g unsalted butter, plus extra for buttering, 1 kg eating apples (such as russet or cox), peeled, cored and chopped into large chunks, 150g caster sugar, 5 star anise and 1 cinnamon stick.
