Stephen Terry cooks braised beef with bread and cheese pudding, and deep-fried broccoli on Saturday Kitchen.
Stephen says: “Brasied beef is flaked and layered with fried sourdough and cheese to make an oven-baked pudding.”
The ingredients are:
For the beef: 1kg shin of beef on the bone, 1kg oxtail on the bone, 2 carrots, cut in half, 1 onion, cut into quarters, 2 celery sticks, 1 small head of garlic, cut in half, 3 bay leaves and 1 sprig of thyme.
For the pudding: 200g beef dripping, for frying, 8 thick slices sourdough bread, 3 tbsp Dijon mustard, or English mustard if you prefer, 150g Cheddar, grated and salt and freshly ground black pepper.
For the broccoli: vegetable oil, for deep frying, 8 small heads of purple sprouting broccoli, 150g mayonnaise, 40g creamed horseradish, 300ml milk and 200g plain flour, to coat.
