Phil Vickery serves up a healthier part-baked and part fried chicken bucket with an all in one potato-slaw salad on This Morning.
The ingredients are: 2 tbsp dried oregano, 2 tbsp dried thyme, 1 tbsp cumin, 2 tsp ground white pepper, 225g plain flour, 1 tbsp salt, 4 medium eggs, 4 tbsp condensed milk, 100mls cold water, 8 medium chicken thighs, bone in and skin on and Sunflower or safflower oil, to fry.
For the All-in-one coleslaw:
1 small clove garlic crushed very finely, 1 tbsp Dijon mustard, 2 tsp sugar, 4 tbsp red wine vinegar, 4 tbsp extra virgin olive oil, 2 tbsp sunflower oil, Salt and freshly ground black pepper, Sugar, ½ small red cabbage VERY FINELY sliced, on a mandolin is perfect, 1 red onion again VERY FINELY sliced, 1 medium carrot, finely sliced into match sticks, 150g fresh spinach finely sliced and 500g cooked baby new potatoes, in small cubes, skin on.
