Chimichurri or chimmichurri is a green sauce used for grilled meat, originally from Argentina. It is another name for pesto, based on finely-chopped parsley, minced garlic, sunflower oil, oregano, and white vinegar.
For his chimichurri recipe, John’s ingredients were: salt, hot water, dried parsley, dried chilli, vinegar, sunflower oil, ground white pepper and fresh parsley.
