Bill Granger served up tasty chicken and leek pot pies with a puff pastry topping on Lorraine.
The ingredients are: 1⁄2 cup plain flour, 1⁄2 tsp cayenne pepper, 1⁄2 tsp white pepper, 1 tsp salt, 500g chicken breast fillets, cut into 2cm dice, 2 tbsp olive oil, 25g butter, 2 leeks, white part only, sliced, 2 cloves garlic, crushed, 1/3 cup white wine, or water, 1 cup chicken stock, or water, 1⁄2 cup single cream, 1 cup fresh peas, boiled for 5 minutes, 1 tbsp chopped tarragon, 1⁄4 cup chopped parsley, 300g ready-made puff pastry, in a block or 4 sheets and 2 egg yolks, lightly beaten for glazing.
