Cyrus Todiwala cooks a tasty and healthy beef chilli flash-fry served with a yoghurt rice dish on Food and Drink with Tom Kerridge.
Cyrus says: “This popular Goan flash-fry makes for a light, refreshing and healthy midweek meal.”
The ingredients for the lash-fry: 1½ tsp ground coriander, 1½ tsp ground cumin, ¼ tsp groud turmeric, ½ tsp lime juice, 200g-250g fillet steak, finely sliced into 0.25cm strips, 3 tbsp sunflower or rapeseed oil, 15-20g fresh root ginger, grated, 15-20g garlic, finely chopped, 1 onion, finely sliced, ½ green pepper, stalk and seeds removed, finely sliced, ½ red pepper, stalk and seeds removed, finely sliced, 3-4 spring onions, trimmed, finely sliced, 55g plum tomatoes, seeds removed, flesh sliced into thin strips, 1-2 green chillies, stalk removed, sliced, 1 tsp chilli powder, or to taste, salt, to taste and 2 tbsp chopped fresh coriander.
