Nigel Barden serves up baked tofu with sriracha on Radio 2 Drivetime with Simon Mayo.
The ingredients are: 1 x 396g pack original tofu, drained, 1 tsp veg oil, 3 garlic cloves, finely chopped, 5cm piece of fresh root ginger, peeled & cut into thin matchsticks (julienned), 2 tbsp finely chopped coriander stalks, 3 tbsp Sriracha, 1 tbsp light soy sauce, ½ tsp freshly ground Sichuan pepper, pinch of white pepper, ½ red onion, sliced, ½ red pepper, seeded and sliced or chopped, 100g frozen peas, freshly squeezed lime juice to taste and freshly chopped coriander leaves, to garnish.
