James Martin cooks a hearty and wholesome lamb shanks pie with wine and chicken stock on James Martin: Home Comforts.

James says: “Lamb shanks are still a good-value cut and they’re perfect for a comforting pie like this one. It takes a long time to cook but it is worth it.”

The ingredients are: 4 lamb shanks, 1 tbsp rapeseed oil, 2 onions, roughly chopped, 4 garlic cloves, crushed, 2 tbsp plain flour, plus extra for dusting, 250ml white wine, 750ml chicken stock, 600g potatoes, peeled and cut into 2.5cm pieces, 3 large carrots, cut into 2.5cm pieces, 4 celery stalks, cut into 2.5cm pieces, 2 bay leaves, 2 sprigs fresh rosemary, 4 sprigs fresh thyme, 1 x 400g tin haricot beans, drained, 1 free-range egg and 1 free-range egg yolk, lightly beaten, 400g ready-made puff pastry and 300g peas and salt and freshly ground black pepper.
