Dean Edwards serves up a healthy Mediterranean salmon parcels dish on Lorraine.
The ingredients for the parcels: 4 small skinless salmon fillets, 1 lemon, sliced thinly, 100g cherry tomatoes, diced, 2 cloves garlic, crushed, 100g olives, halved, Small handful fresh basil, torn and 3 tbsp olive oil.
For the veg: 1 large sweet potato, peeled and cut into inch chunks, 1 red pepper, deseeded and cut into 4, 1 green pepper, deseeded and cut into 4, 2 red onions, peeled and quartered, 200g cherry tomatoes on the vine and 1 bulb garlic, halved.
For the dressing: 2 tbsp olive oil, 1 tbsp sherry vinegar and 1 tsp honey.
