Dean Edwards serves up mushroom and roasted pepper chili for a great vegetarian meal which will feed a family of four for under a fiver on Lorraine.
The ingredients are: 500g chestnut mushrooms, 1 large onion diced, ½ 450g jar roasted red peppers, drained, 4 cloves garlic crushed, 400g tin red kidney beans, 400ml beef stock or vegetable stock, 2 heaped tbs tomato puree, 1 tsp ground cinnamon, 1 tsp ground cumin, 1 tsp dried oregano, 1-2 tsp chilli powder, 4 large baking potatoes and Grated cheese and sour cream for serving (optional).
