Monica Galetti serves up a tasty soy and honey-glazed chicken with coconut brown rice dish for her keep it simple challenge with Tom Kerridge on Food and Drink.
Monica says: “This quick and easy recipe is inspired by my mother’s home cooking back in New Zealand and it use a secret coconut oil ingredient that will blow your taste buds.”
The ingredients are: 4 tsp clear honey, 4 tsp soy sauce, 450g boneless, skinless chicken thighs, 150g brown rice,pinch salt, ½ tsp coconut oil, 1 tsp black sesame seeds, handful fresh coriander leaves and 1 tsp pumpkin seeds, chopped.
To serve: 1 tbsp sesame oil, 1 tbsp rapeseed oil and 2 heads of bok choi, halved.
