James Martin serves up chicken curry with basmati rice using Shemin’s Indian curry paste that is quick and easy to make on James Martin: Home Comforts.
James made the curry in around fifteen minutes and says: “This easy curry teams a ready-made curry paste with a few other ingredients to produce a tastebud-tastic meal. Don’t cut the chicken breast too small because you don’t want them to dry up.”
The ingredients are: 3 tbsp desiccated coconut, 200g basmati rice, 40g butter, 1 tbsp vegetable oil, 1 onion, finely sliced, 50g medium-strength curry paste, 4 small chicken breasts, skinned and cut into 2cm slices, 200g canned tomatoes, 300ml coconut milk, 2 tbsp chopped fresh coriander leaves, 2 tbsp chopped fresh mint leaves, 1 lime, juice only and salt and freshly ground black pepper.
