John Whaite serves up a tasty Thai green chicken curry with healthy rice on Lorraine that contains around 280 calories per portion, and 40 cals in the cauliflower rice.
The ingredients for the curry paste are: 35-40g fresh coriander, including stalks, 25g fresh ginger, peeled, 2 large garlic cloves, peeled, 6 spring onions, 1 stalk of lemongrass, white flesh only, 1 birds eye chilli, 1tbsp soy sauce and 2tsp fish sauce.
For the Curry: 6 skinless and boneless chicken thighs cut into 1inch chunks, 35g creamed coconut, 400ml chicken stock and 1 courgette, in 1cm dice.
For the Cauliflower Rice: 1 medium cauliflower, coarsely grated, a little oil and Salt and pepper.
