Jamie Oliver and actress Kate Hudson serves up hot and smoky vindaloo curry made with pork belly on Jamie and Jimmy’s Friday Night Feast.
However, before Jamie gets down to cooking his spicy dish, he consults one of the world’s greatest Goan chefs, Rego Urbano, who’s cooked for everyone from the Beatles to Bill Gates.
Jamie says: “I’ve loved eating vindaloo ever since I was a kid, but beware: it’s not for the faint-hearted!”
The ingredients are: 2 heaped teaspoons coriander seeds, 1 teaspoon cumin seeds, 1 heaped teaspoon black peppercorns, 2 dried Kashmiri chillies, 1 thumb-sized piece of fresh ginger, 6 cloves of garlic, 1 teaspoon turmeric, 1 tablespoon olive oil, 1 tablespoon cider vinegar, 1 kg higher-welfare pork belly, skin removed, sea salt, 3 small onions, 1 handful fresh curry leaves,1 fresh red chilli, 1 fresh yellow chilli, 1 tablespoon tamarind paste and 1 heaped tablespoon soft brown sugar, 1 cinnamon stick, 4 cloves and olive oil.
