Nigel Slater makes a hangover beef salad on Nigel Slater’s New Year Suppers.
Nigel says: “Use lentils and leftover beef to make this hearty warm salad that’s perfect comfort food.”
The ingredients are: 250g Puy lentils or other small, green lentils, stock or water, to cover, 1 medium-sized onion, peeled and chopped and 1 fresh bay leaf and 1 garlic clove.
For the dressing: sea salt flakes, 1 tablespoon red wine vinegar, ½ teaspoon Dijon mustard, ground black pepper, 4 tablespoons olive oil, 1 short lump of fresh horseradish, for grating, 1 handful fresh flatleaf parsley, roughly torn or chopped and leftover rare roast beef, thinly sliced, to serve.
