Nigel Barden makes a Turkey tikka dish for the festive season on Radio 2 Drivetime with Simon Mayo.
The ingredients are: 800g boneless turkey breast, skin removed, 1 tsp turmeric, salt and freshly ground black pepper.
For the Marinade: 150g natural full-fat yoghurt, 4cm piece of fresh root ginger, peeled, 4 garlic cloves, 1/2 tsp ground cumin, 1/2 tsp ground coriander, 1/2 tsp chilli powder, 1 tbsp lime juice, 1/2 tsp garam masala, 2 mild fresh green chillies (optional) seeds removed if liked, roughly chopped, 2 tbsp sunflower, 20g butter, melted, salt & ground white pepper.
