Gino serves up roasted pheasant crown with spiced red cabbage for the festive season Let’s Do Christmas.
The ingredients are: 4 pheasant crowns, 2 bay leaves, 1 tbsp black peppercorns, 1 onion quarters, 2 tbsp olive oil, 25g unsalted butter, 1 tbsp flour, 75ml red wine, 200ml good quality beef stock and 1 tbsp redcurrant jelly.
For the red cabbage: 2 tbsp olive oil, 1 medium red cabbage, finely sliced, 1 large Bramley apple peeled, cored and diced, 50g raisins, 1 cinnamon stick, 1 star anise, 100g dark brown sugar and 150ml red wine vinegar.
