Brian Turner serves up sweet-and-sour turkey with egg-fried rice for the festive season on Christmas Kitchen.
Brian says: “This classic way with leftover Christmas turkey is a crunchy, tangy treat perfect for a Saturday night fakeaway.”
The ingredients for the turkey are: 1 tbsp dry sherry, 1 tbsp light soy sauce, 1 tbsp sesame oil, pinch salt, 450g cooked leftover turkey, cut into 2cm cubes, vegetable oil, for frying, 1 free-range egg, beaten and 2 tbsp cornflour, plus extra for dusting.
For the sweet-and-sour sauce: 150ml chicken stock, 1 tbsp dark soy sauce, 1 tbsp sesame oil, 1 tbsp cider vinegar, 2 tbsp tomato ketchup, 2 green peppers, stalk and seeds removed, cut into 2cm pieces, 4 spring onions, trimmed, cut into 2cm lengths, 1 tbsp juice from a satsuma and 1 tbsp cornflour.
For the egg-fried rice: 2 tbsp vegetable oil, 300g cooked basmati rice, cooled to room temperature, 2 free-range eggs, beaten, 4 spring onions, trimmed, chopped and 4 tbsp soy sauce.
