Sally Bee makes a delicious healthy Christmas pudding on Lorraine substituting the brandy for orange juice.
Sally says: “make this ahead of time after cooking with the steam method, then reheat using the microwave – you’ll still get the same wonderful flavour in super quick time.”
The ingredients are: 75g currants, 75g sultanas, 115g raisins, 50ml brandy, 50g cranberries, 75g self-raising flour, ½ tsp cinnamon, ½ tsp mixed spice, 50g breadcrumbs, 50g dark Muscovado sugar, grated rind of ½ lemon, grated rind of ½ orange, 115g apples, peeled and grated, 115g carrots, peeled and grated, 2 medium eggs, 60ml skimmed milk, 2 tbsp molasses and 60ml brandy, optional (or orange juice).
