Mary Berry makes a delicious celebration chocolate mousse cake for the festive season on Mary Berry’s Absolute Christmas Favourites.
Mary says: “This rich indulgent dessert is fit for a celebration and makes a stunning centrepiece.”
The ingredients for the chocolate cake are: 100g margarine, plus extra for greasing, 25g cocoa powder, plus extra for dusting, 3 tbsp boiling water, 100g caster sugar, 100g self-raising flour, 1 level tsp baking powder, 2 large free-range eggs and 2 tbsp brandy.
For the mousse: 300g plain chocolate (no more than 40-50 per cent cocoa solids), broken into squares, 450ml whipping cream.
To serve: 225g fresh raspberries and blueberries, double cream and icing sugar, for dusting.
