Gino D’Acampo serves up an open vegetable lasagne without eggs that is 100% a vegan dish for the festive season on Let’s Do Christmas with Gino and Mel.
The ingredients for the pasta are: 150g white 00 flour, 90ml hot (not boiling) water, A large pinch of salt and 1 tbsp olive oil.
For the filling: 1 medium aubergine, cut into 1 cm dice, 1⁄2 butternut squash cut into 1 cm dice, 2 tbsp olive oil, 1 tsp chilli flakes and salt.
For the sauce: 1 tbsp olive oil, 1 clove garlic finely sliced, 200ml passata, Basil and Chopped parsley to serve.
